Our residents enjoy seasonal food that not only looks and tastes delicious, but is also nutritious

A wide variety of home cooked meals are prepared by our in-house Chefs for residents to choose from. Only high quality and fresh ingredients from accredited suppliers are used.

Our food and dining service consists of breakfast, morning tea, a hot lunch with vegetables or salad or sandwiches and dessert, afternoon tea and a hot dinner with vegetables or salad or sandwiches and dessert. Some of our residents prefer their main meal to be lunch while others prefer their main meal to be dinner – so we offer both options. Fresh fruit, yoghurt and snacks are also available 24/7.

All meals are served with tea and coffee and fresh juices. For lunch and dinner, a selection of beers and wines are also available.

We are happy to accommodate individualised meal plans for our residents with specific dietary requirements.

We also offer food molds for residents who are on texture modified diets because of swallowing difficulties.

Residents can choose to have their meals in the main dining room, delivered to their room or another location (such as the garden or outdoor areas) if they prefer.

Our menus are endorsed by Dieticians and each meal is nutritionally evaluated.

Meet our Executive Chef

No one knows the importance of food presentation and taste and is more passionate about making sure our residents continue to derive pleasure from their meals than our Executive Chef, Dean Stapleton.

Dean Stapleton is a highly qualified chef with more than 30 years in the food industry. He has been heading up the catering department at CraigCare since 2015. Over that time he has won the hearts and tummies of our residents through his mouth watering and restaurant quality dishes. His signature dishes for this Spring include:

  • Lemon butter chicken served on a bed of cheesy risotto,
  • One pot poached chicken with zucchini, pea, potato and leek broth, and
  • Meatloaf Wellington served with mashed potato, carrots and zucchini and drizzled with a seeded mustard gravy.

For Dean, the most rewarding part of his job is not only in the words of thanks from our residents and families, but the empty plates left after meal time and the requests for seconds.

Breakfast

  • Continental (5-6 days) – hot porridge, 5 cereals, toast (white, wholemeal, wholegrain) and crumpets, fruit salad, yoghurt, prunes
  • Cooked breakfast (1-2 days) – eggs (scrambled or poached), sausages, bacon, baked beans, grilled tomatoes and mushrooms
  • Choice of 4 juices, a variety of teas, coffee, milo and hot chocolate

Lunch

  • The choice of a hot meal or salad or sandwiches.
    • Example hot meals include: meatloaf wellington with wholegrain mustard, ricotta and spinach frittata, pasta bolognese, beef rissole, Moroccan baked fish, braised lamb and bean and chickpea casserole, steamed fish with tomato, olive and caper salsa, beef and mushroom casserole
    • Example salads include: chicken salad, tuna salad, pasta salad, egg and potato salad, roast meat salad, Greek salad
  • Dessert – examples include passionfruit pavlova, golden syrup pudding and cream, creamed rice pudding, apple rhubarb with custard, ice-cream sundae, apple crumble and custard, profiteroles, trifle, chocolate sponge and chocolate sauce, cheesecake, panna cotta, strawberry mousse
  • Choice of 4 juices, a variety of teas, coffee, milo and hot chocolate
  • Selection of wines and beers

Afternoon Tea

  • Examples include: scone with jam and cream, carrot cake, cheese and crackers, sultana sponge, bacon and cheese scones, fruit platter, apple tea cake, custard tart, chocolate truffles, party pies, sandwiches, muesli slice
  • Choice of 4 juices, a variety of teas, coffee, milo and hot chocolate

Morning tea

  • Examples include: apple cinnamon muffin, marble cake, vanilla slice, coconut raspberry slice, Anzac biscuits, sultana or date scones, jam and cream sponge, fruit cake, sugar cinnamon donuts, shortbread, muesli slice, butter cake lemon frosting
  • Choice of 4 juices, a variety of teas, coffee, milo and hot chocolate

Three Course Dinner

  • Example soups include: beef and vegetable, minestrone, scotch broth, pea and ham, sweet potato, French onion, chicken and mushroom, tomato and basil, pumpkin, vegetable
  • The choice of a hot meal or salad or sandwiches.
    • Example hot meals include: chicken scaloppini with steamed rice and a melange of vegetables, beef lasagne with Greek salad, chicken parmigiana with coleslaw and wedges, pasta carbonara, braised steak and onions with mash potato and peas, homemade pizza with garlic bread and salad, sweet potato fritter with guacamole salsa, curried sausages with mash potato and peas, spinach and ricotta tortellini with napoli sauce
  • Example desserts include: panna cotta raspberry coulis, chocolate pudding, poached pears and custard, fresh fruit salad, cheesecake, ice-cream and topping, peach crumble with ice-cream, crème caramel, stewed apples and custard
  • Choice of 4 juices, a variety of teas, coffee, milo and hot chocolate
  • Selection of wines and beers

Snacks

  • Fresh fruit and snacks are available 24/7

Food Celebrations

At CraigCare, we celebrate many occasions with food. Each month we organise between 3-7 special events which we highlight through our food. Aside from the obvious special days such as Mother’s Day, Father’s Day, Anzac Day, Christmas and Easter, some of our other events include:
